
I have a cold!!! This week has been scorching in Chicago, and I just got back from Dallas, where it was absurdly hot, but somehow I managed to come down with this thing. I've been sick for a few days now, coughing, sneezing and waking up at night with a sore throat. The bright side? These mango lassi popsicles. I don't think they're really helping to be honest, but they're delicious and supposed to soothe my throat, so I keep looking forward to having one after work ;-)
Ingredients (makes 10 pops):
2 ripe mangoes, peeled and chopped (about 2 cups)
1/4 teaspoon ground cardamom
1.5 cups plain yogurt
honey or sugar, as desired
Directions:
Puree the chopped mango with the cardamom. Set aside.
In a separate bowl, sweeten the yogurt with honey or sugar (I used 2 tablespoons of honey for a mild amount of sweetness)*.
Fill the popsicle mold, alternating spoonfuls of pureed mango and the yogurt mixture. Gently swirl with a popsicle stick, then insert the popsicle sticks and freeze until set.
*If you prefer a well-blended popsicle, just blend everything together in one bowl instead. I like keeping the mango and yogurt separate so that each bite is a little different :-)
