Frozen Coconut Limeade

The other day we were driving, and I asked Brian what he thinks we thinks we disagree on most (Hmm, it took reading that out loud to notice how annoying I must be). I was anticipating it being music and told him so, and he quickly said, "No way, coconuts."

love coconuts. It's a lot like my thing for peaches, but even more extreme. I love the smell, I love the texture. Some of my fondest childhood memories are my dad cracking open fresh coconuts for me with hammers and nails in the middle of a London winter in our little garage. Coconut lotion (can't get enough of this), ice cream, water, milk, sauce — you name it. I could write posts and posts on coconut LaCroix and these snacks. Brian doesn't like it at all, and he's right, while he can handle a little Bruno Mars here and there, he'd never try this drink.

But you guys, this frozen coconut limeade is the slushie of my dreams. If we want to get technical, it's called limonada de coco, but whatever you want to call it, it's the most delicious summer beverage ever. I don't want to oversell it, but you must believe it when I tell you: this drink tastes like vacation, and summer, and all things good. And I'm fine disagreeing about it with Brian. Because I know I'm right ;-) 

 

Ingredients (serves four):
2 1/2 cups crushed or small ice cubes
1 cup coconut milk
A little less than 1/2 cup lime juice (about 3 limes)
3 tablespoons granulated sugar
Lime slices for garnish

Directions:
Blend everything until it reaches your desired consistency — almost smooth, for a crunchier effect, or fully smooth, for a milkshake/creamier effect. Pour into glasses, garnish with lime.

  1. I get similarly nostalgic about coconut! It reminds me of summers in Italy as a kid buying fresh coconut on the beach while visiting my grandmother :) I can't wait to try this drink!

    1. I'm so glad someone else loves them as much as I do. Definitely try the drink! And don't skimp on the coconut milk. None of that low fat stuff ;-)

  3. This recipe is perfect for NYC's summer weather!! I recently rediscovered my love for coconut water and coconut milk, so I will def try this out :)

  4. This drink looks wonderful! I too am a crazy coconut lover. I even have some coconut shaving cream. It is so hard not to take a taste in the shower! I was wondering if you have tasted LaCroix coconut water lately. I was in love when I found it this summer in a different state. It was a pure, yummy coconut flavor. Then a couple of weeks ago, a local store started selling it here. This stuff is horrible. The taste is a cross between a pineapple (which I can't stand) and cheap perfume. I have tried one can out of each of the four cartons that I purchased and they are all the same. I guess I will start looking for a new drink that only tastes like coconut. If you have any suggestions for a replacement, please post. I have to go dry my tears now!
