The Best Thai Green Curry Soup

I wish I wasn't writing about soup in May, but as long as we're wearing sweaters, we might as well write about soup. This Thai green curry soup is how I survived the severe winter and these lingering months after it. I can't decide what my favorite thing about it is. Is it the fact that it's the perfect amount of spicy? That it's so light and yet so filling? That it's so flavorful with all of my favorite Thai spices? That it's 84 cents? Seriously! 84 cents! Three Trader Joe's ingredients: 

Miso ginger broth: $1.99 (six servings): $0.33
Green curry simmer sauce: $2.49 (six servings): $0.41
Bag of baby spinach: $1.99 (20 servings): $0.10

All you have to do is pour 3/4 cup-1 cup of miso ginger broth into a pot, heat it on medium-high for about a minute. Add 1/4 cup thai green curry simmer sauce, mix it up. Keep mixing on medium-high heat for about four minutes. Drop in some spinach leaves somewhere around minute three. 

One pot to clean, less than a dollar spent, a delicious meal made. What amazes me is that it's not just cheap, it's delicious, I promise. Trust me, I've eaten lots of dollars worth this winter.
